Grilled Scallops in Brown Butter with Sorrel & Spring Onions

INGREDIENTS

  • 2 sticks (8 ounces) unsalted butter

  • 1 fresh green garlic stalk (see notes for substitutions)

  • 2 spring onions (see notes for substitutions)

  • 1/4 teaspoon coarse salt, plus more for the scallops

  • 1/4 cup olive oil

  • 2 pounds sea scallops, rinsed and patted dry

  • Ground black pepper

  • 1 cup of fresh green sorrel leaves that have been cut into chiffonade (very thin strips)

  • 2 limes, cut into wedges
